Cake Rusk Recipe

Cake Rusks in India are one of the most favourite tea time snacks. Rusks are mildly sweet, healthy snacks that complement tea and coffee excellently. A bite of rusk dipped in hot chai tastes heavenly. Cake rusk is an Asian dessert and is a type of double baked cake. It has a golden-brown colour, crispy texture and is a quite popular delicacy in Pakistan and India. The flour, butter, egg and sugar mixture should be blended well, in order to obtain the right consistency of the batter. Different kinds of moulds can be used to make the shape more attractive. Children will definitely enjoy these modifications. As with any recipe that involves baking, the oven is to be preheated and set at the correct temperature to get the desired result.
The baking tray should be greased before mounting the rusks on it, to avoid sticking. While baking, the cake should be checked after 15-20 minutes if the baking is completed. It should be checked occasionally, as it tends to become brown and burn quickly. In this recipe, careful baking is most important step and it requires two steps. When they come out of oven first time they are soft. Then cooling is required for 10-15 minutes then they are re- baked in oven on low temperature which makes them crunchy. The texture of rusk is important; it should not be either too soft or too hard. A perfect crispiness is required for the recipe. A careful eye should be kept on them during the second stage of baking, as they might get burnt. Sides should be flipped to ensure that both the sides are cooked thoroughly.

Variations can be introduced in the form of addition of semolina (suji) instead of refined flour (maida) for a healthier alternative. Yellow or orange colouration can be added to enhance the colour of the rusk. Tuti- fruity or dry fruits may be added to the batter to make it richer. Cardamom powder or nutmeg powder can be added to the batter for different flavours. These rusks can be stored in an airtight container for a month or more. They do not need to be refrigerated. These wonderful treats make a hot cuppa of chai all the more special.
